Julie Eslinger, Centerplate’s executive pastry chef at the Colorado Convention Center in Denver, was named to the prestigious Pastry Team USA for the World Pastry Cup 2021 in Lyon.
Club Coupe du Monde U.S.A. received and reviewed applications from pastry chefs from around the country to compete for a spot on Team USA and Eslinger was just named over the weekend. She will mainly be the ice sculpter on the team.
Every two years in Lyon, the 22 best national teams are invited to participate in this two-day event during which the competitors create stunning chocolate, sugar, and ice carving centerpieces. Each team must present a chocolate entremets, an entremet glace and a plated dessert.
Club Coupe du Monde U.S.A. is a 501(c)(3) non-profit organization. Its purpose includes study and advance of both, the art and the science of food preparation and food service. Every two years the club searches for and identifies America’s best culinary educators, researchers, and food service professionals. They challenge those willing to participate to create leading edge advances in food preparation, taste combinations, shelf life extension, and presentation styling. They combine the participants’ talents, and present a team at the World Pastry Cup. Coupe du Monde de la Pâtisserie is held every two years in Lyon, France, coinciding with the Bocuse d’Or competition and SIRHA (International Hotel Catering and Food Trade Exhibition). The purpose is not only to highlight the skills and new gastronomical ideas of some of the world’s finest pastry chefs but also to inspire and share with others. Twenty teams composed of three pastry chefs will participate in this two day event.
