Fontainebleau Las Vegas, the highly anticipated luxury resort and casino, has announced the opening of reservations for its prestigious collection of restaurants. The resort, set to officially open its doors on December 13, 2023, is now accepting advance dining reservations through its website, pending regulatory approvals.

Excitement is palpable as Fontainebleau Las Vegas Senior Vice President of Food and Beverage, Anthony Olheiser, expresses enthusiasm about providing guests with a sneak peek into the extraordinary dining experiences awaiting them. Olheiser emphasizes the resort’s dedication to delivering unforgettable culinary journeys, showcasing the innovative prowess of their in-house team, and celebrating the collaborative efforts between Fontainebleau Las Vegas and their esteemed partners.

Featuring an impressive lineup of 36 first-to-market concepts, the Fontainebleau Las Vegas restaurant and bar collection is curated by renowned chefs and restaurateurs, including Evan Funke, Masa Ito, David Grutman, David “Papi” Einhorn, and Alan Yau. Guests can now secure reservations for a variety of exquisite dining options, each promising a distinct and memorable experience.

Here’s a preview of some of the dining establishments with live reservations:

  1. Chyna Club: A creation by Alan Yau, founder of Hakkasan and Wagamama, Chyna Club offers a fusion of eclectic Chinese cuisine in an alluring setting.
  2. Don’s Prime: With its refined ambiance and tableside service, Don’s Prime promises a culinary experience filled with classic dishes infused with a modern twist.
  3. Komodo: Created by Groot Hospitality, Komodo is a vibrant hub combining Las Vegas flair with Southeast Asian flavors, featuring signature dishes like Peking duck and an array of bespoke cocktails.
  4. KYU: Inspired by Japanese “yakiniku” grilling techniques, KYU Las Vegas serves up American barbecue favorites with an Asian twist, a perfect blend of cultural influences.
  5. La Fontaine: This elegant French cuisine destination, La Fontaine, offers a delightful daytime fine-dining experience, specializing in classic brunch dishes in an exquisite setting.
  6. Mother Wolf: Renowned pasta master Evan Funke brings the flavors of La Cucina Romana to the Las Vegas Strip with the opening of Mother Wolf, allowing guests to indulge in a taste of Rome.
  7. Papi Steak: Reflecting the allure of Golden Era Hollywood, Papi Steak combines tradition with a modern spectacle, promising an unforgettable steakhouse experience.
  8. The Tavern: The Tavern offers a lively and upscale bar and restaurant atmosphere, presenting American classics with a fresh Californian twist alongside a sushi bar.
  9. Vida: This bustling American bistro serves breakfast and lunch seven days a week, boasting a menu of classic brunch favorites and cocktails, including mimosas and Bloody Mary’s.
  10. Washing Potato: With a whimsical touch, Washing Potato, by restaurateur Alan Yau, takes guests on a journey through the delicate traditions of Hong Kong’s comfort street foods.

Apart from these, Fontainebleau Las Vegas is set to introduce several innovative concepts for walk-up diners, including Capon’s Burgers, Miami Slice, Roadside Taco, El Bagel, Bar Ito, and Nona, as well as Fontainebleau originals Café Cuto and Chez Bon Bon.
