Global Spectrum, the managing company for the Owensboro Convention Center, introduced a new member to its team, filling the position of director of food and beverage.
With over 12 years of culinary experience, Eric Copeland started his successful career in Las Vegas, studying under some of the greatest chefs in the region. In 2002, Eric returned to his hometown in Pueblo, Colo., where he assumed many positions in the industry, including becoming a chef at several local gourmet restaurants.
During his stay at the Pueblo Country Club, Copeland refined his professional culinary skills, working his way from head line chef to sous chef and ultimately becoming the head chef in 2006.
In 2008, Copeland became the executive chef at the Pueblo Convention Center. Giving him a dual role as well as a very important opportunity, he was promoted to director of food and beverage, while keeping his title as executive chef.

His drive and passion for the perfect food experience is second to none.”
Pueblo, Colo., opened many doors for Copeland’s culinary career. He not only mastered his culinary skills and the complexities of managing food for events, but also acted as an intermediate cookery instructor at Pueblo Community College.
